Those of you who have been following me for a while know I used to post gluten and dairy free recipes on a somewhat regular basis. Life got busy.

This new recipe is so fabulous I wanted to share it. It’s (slightly) adapted from Diane SanFilippo’s Practical Paleo Cookbook.

Ingredients:

1/4C raw tahini

1/2C warmed coconut manna (Nutiva Coconut manna can be found in Whole Foods and other grocery stores: https://bit.ly/2uJzm45)

1T dried, shredded, unsweetened coconut

1t vanilla

3T maple syrup

1/2t cinnamon

pinch of high quality salt

Mix all ingredients together in a small bowl. Place in the refrigerator for an hour or until it hardens slightly. Roll into small, bit-size balls and then dredge them in the topping of your choice: more dried coconut, sesame seeds, or even dip them in melted dark chocolate. Store in the fridge. Enjoy.
